Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Chill the dough for at least 30 minutes.
Roll dough into 1-inch balls and coat in a mixture of cinnamon and sugar.
Place cookies on a baking sheet and bake for 8-10 minutes, or until edges are set and centers are slightly soft.
Let cookies cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
