2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 tablespoon sugar
1/4 cup cold unsalted butter, cubed
3/4 cup buttermilk
1/4 cup raisins (optional)
Instructions
Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
In a large bowl, whisk together the flour, baking soda, salt, and sugar.
Add the cubed butter to the dry ingredients and use a pastry cutter or your fingers to work the butter into the flour mixture until it resembles coarse crumbs.
Gradually pour in the buttermilk and mix until the dough comes together. If using raisins, gently fold them into the dough.
Transfer the dough to a floured surface and shape it into a circle about 1 inch thick. Use a knife to score the dough into 8 wedges.
Place the scones on the prepared baking sheet and bake for 15-18 minutes, or until golden brown.
Remove from the oven and let the scones cool slightly before serving. Enjoy warm with butter and jam!
