In a large bowl, combine diced apples, brown sugar, cinnamon, and lemon juice. Mix well.
In a separate bowl, combine graham cracker crumbs, oats, and melted butter. Mix until crumbly.
Press half of the crumb mixture into the bottom of mini muffin tins.
Top with the apple mixture.
Sprinkle the remaining crumb mixture over the apples.
Drizzle with caramel sauce.
Chill for at least 30 minutes before serving.
