  • 1/4 cup unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup dark chocolate chips
  • Flaky sea salt, for sprinkling

Instructions

  • Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper. In a medium bowl, whisk together 1 ½ cups all-purpose flour, ½ teaspoon baking soda, and ¼ teaspoon salt. Set this aside.
  • In a large bowl, cream together ½ cup (1 stick) unsalted butter, softened, ½ cup granulated sugar, and ½ cup light brown sugar until light and fluffy, about 2-3 minutes. Beat in one large egg and 1 teaspoon of pure vanilla extract until just combined. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined – be careful not to overmix! Stir in 1 cup of semi-sweet chocolate chips. Set this wonderfully chewy cookie dough aside.
  • Now, onto the fudgy brownie portion! In a separate microwave-safe bowl, melt ¼ cup (½ stick) unsalted butter with 2 ounces unsweetened chocolate. Heat in 30-second intervals, stirring until smooth. Allow it to cool slightly.
  • In another medium bowl, whisk together two large eggs, ¾ cup granulated sugar, 1 teaspoon pure vanilla extract, and ¼ teaspoon espresso powder (if using, it really deepens the chocolate flavor!). Pour the cooled chocolate-butter mixture into the egg mixture and whisk until well combined.
  • In a separate small bowl, combine ½ cup all-purpose flour, ¼ cup unsweetened cocoa powder, ½ teaspoon baking powder, and ¼ teaspoon salt. Gradually add these dry ingredients to the wet brownie mixture, mixing until just combined. Fold in ½ cup dark chocolate chips.
  • Take about a tablespoon-sized scoop of the cookie dough and flatten it slightly. Then, take about a tablespoon-sized scoop of the brownie batter and place it directly on top of the flattened cookie dough. Gently swirl the two together with a toothpick or a small knife, creating those beautiful marbled patterns. Don’t overdo it, or the colors will blend too much. You want distinct swirls! Place these swirled balls onto your prepared baking sheets, leaving about 2 inches between each cookie. Let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely. This helps them set and prevents crumbling.   • As soon as the cookies come out of the oven, while they are still hot and glistening, gently sprinkle a small pinch of flaky sea salt over the top of each cookie. You want to do this immediately so the salt adheres to the warm, slightly molten chocolate and dough.
