  • 2 pounds Yukon Gold or Russet potatoes
  • 5.2 ounces (1 package) Boursin cheese
  • 4 tablespoons unsalted butter
  • ½ cup milk or heavy cream (or a combination)
  • 2 cloves garlic, minced (optional)
  • Salt and Pepper to taste
  • Chopped chives, parsley, or dill for garnish (optional)

Instructions

  • Peel and cut the potatoes into evenly sized chunks.
  • Place the potato chunks in a large pot and cover with cold water. Add a generous pinch of salt. Bring to a boil, then reduce heat and simmer until fork-tender (about 15-20 minutes).
  • Drain the potatoes thoroughly. Return them to the pot and place over low heat for a minute or two to dry them out slightly.
  • Use a potato masher or ricer to mash the potatoes to your desired consistency.
  • Add the butter, minced garlic (if using), and half of the milk or cream. Mash until the butter is melted and the mixture is smooth. Gradually add the remaining milk or cream until you reach your desired consistency.
  • Crumble the Boursin cheese into the mashed potatoes and stir until it is melted and evenly distributed.
  • Season with salt and pepper to taste. Garnish with fresh herbs, if desired. Serve immediately.
