  • 3/4 cup unsweetened cocoa powder

  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup light brown sugar, packed
  • 1 large egg
  • 1 teaspoon peppermint extract
  • 1 teaspoon vanilla extract
  • 1 bag (approx. 4.67 oz) Andes Mint baking chips, for topping
  • 1/2 cup extra granulated sugar, for rolling

Instructions

  • Preheat your oven to 350°F (175°C). Line several baking sheets with parchment paper or silicone baking mats.
  • In a medium bowl, whisk together the all-purpose flour, unsweetened cocoa powder, baking soda, and salt. Make sure everything is well combined and lump-free.
  • In a large mixing bowl (or the bowl of your stand mixer fitted with the paddle attachment), cream together the softened unsalted butter with both granulated sugar and light brown sugar until the mixture is light, fluffy, and pale in color (about 2-3 minutes on medium speed).
  • Beat in the large egg until fully incorporated, then stir in the peppermint extract and vanilla extract. The mixture should look smooth and creamy.
  • Gradually add the dry ingredient mixture to the wet ingredients, mixing on low speed until just combined. Be careful not to overmix. The dough will be thick and slightly firm, a dark chocolate hue.
  • Scoop rounded tablespoons of dough and roll them into smooth balls between your palms.
  • Place the extra granulated sugar in a shallow dish, then roll each cookie dough ball gently in the sugar until fully coated.
  • Arrange the sugar-coated dough balls about 2 inches apart on your prepared baking sheets. Bake for 9-11 minutes. The cookies will look slightly puffed and set around the edges but may still appear a little soft in the center.
  • As soon as the cookies come out of the oven, immediately press one Andes Mint baking chip gently into the center of each cookie. The residual heat will melt the chip beautifully.
  • Let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
