Ingredients

  • Frosted Sugar Cookies

    • 2 1/2 cups (320g) all-purpose flour
    • 2 tbsp cornstarch
    • 1 tsp baking soda
    • 1/2 tsp kosher salt
    • 10 tbsp unsalted butter, room temp
    • 1 cup (200g) granulated sugar
    • 1/4 cup (50g) vegetable or canola oil
    • 1 large egg + 1 egg yolk, room temp
    • 2 tsp vanilla extract

    Vanilla Buttercream

    • 3/4 cup (185g) unsalted butter, room temp
    • 23 cups powdered sugar
    • 1 tsp vanilla extract
    • 12 tbsp milk
    • Pink gel food coloring
    • Rainbow sprinkles

Instructions

Frosted Sugar Cookies

  1. Whisk flour, cornstarch, baking soda, and salt in a bowl.

  2. In another bowl, beat butter and sugar until fluffy (2–3 min).

  3. Slowly add oil while mixing.

  4. Add eggs one at a time, then mix in vanilla.

  5. Add dry ingredients in two parts, mixing just until combined.

  6. Chill dough (covered) for 30 minutes.

  7. Preheat oven to 350°F (175°C) and line a baking sheet with parchment.

  8. Scoop ¼ cup dough per cookie, roll into balls, and flatten slightly.

  9. Bake 12–15 minutes until edges are pale golden.

  10. Cool 3 minutes on the pan, then transfer to a rack.


Vanilla Buttercream

 

  1. Beat butter until smooth.

  2. Add 2 cups powdered sugar, mix, then add vanilla and 1 tbsp milk.

  3. Adjust texture: add more sugar if thin or 1 more tbsp milk if thick.

  4. (Optional) Tint with pink and a tiny bit of brown food coloring.

  5. Frost cooled cookies and add sprinkles.
