  • 1.5 lbs boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1/2 cup cornstarch
  • 1 large egg
  • 2 cups vegetable oil, for frying
  • 1/2 cup mayonnaise
  • 1/4 cup sweet chili sauce
  • 1-2 tablespoons Sriracha, to taste
  • 1 tablespoon rice vinegar
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 2 green onions, thinly sliced, for garnish
  • 1 tablespoon sesame seeds, for garnish

Instructions

  • In a bowl, whisk together cornstarch, egg, garlic powder, onion powder, salt, and pepper.
  • Add the chicken pieces to the cornstarch mixture and toss to coat evenly.
  • Heat vegetable oil in a large skillet or wok over medium-high heat.
  • Carefully add the chicken pieces to the hot oil in batches, being careful not to overcrowd the pan. Fry for 3-5 minutes per side, or until golden brown and cooked through.
  • Remove the chicken from the oil and place on a paper towel-lined plate to drain excess oil.
  • In a separate bowl, whisk together mayonnaise, sweet chili sauce, Sriracha, and rice vinegar until smooth.
  • Pour the sauce over the fried chicken and toss to coat evenly.
  • Garnish with green onions and sesame seeds. Serve immediately.
