  • 2 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 cup (2 sticks) unsalted cold butter
  • 1/4 cup cold shortening
  • 6-8 tablespoons ice water
  • 1/2 cup granulated sugar (for filling)
  • 2 tablespoons granulated sugar (for sprinkling)
  • 1/4 cup brown sugar (for filling)
  • 1 teaspoon ground cinnamon (for filling)
  • 1/4 teaspoon ground nutmeg (for filling)
  • 1 tablespoon lemon juice (for filling)
  • 1 large egg (for egg wash)
  • 1 tablespoon milk or cream (for egg wash)

Instructions

  • Prepare the dough: Combine flour and salt in a bowl. Cut in cold butter and shortening until mixture resembles coarse crumbs. Gradually add ice water until dough comes together. Pat into a disc, wrap, and chill for at least 30 minutes.
  • Make the filling: Peel, core, and dice apples. In a saucepan, combine apples, granulated sugar, brown sugar, cinnamon, nutmeg, and lemon juice. Cook over medium heat until apples are tender, about 10-15 minutes.
  • Assemble the bites: Preheat oven to 375°F (190°C). Roll out dough on a lightly floured surface. Cut into small squares or circles. Place a spoonful of apple filling in the center of each square. Fold over to form triangles or crimp edges to seal.
  • Bake the bites: Brush bites with egg wash and sprinkle with granulated sugar. Bake for 15-20 minutes, or until golden brown. Let cool slightly before serving.
