1 cup (2 sticks) unsalted cold butter
1/4 cup cold shortening
6-8 tablespoons ice water
1/2 cup granulated sugar (for filling)
2 tablespoons granulated sugar (for sprinkling)
1/4 cup brown sugar (for filling)
1 teaspoon ground cinnamon (for filling)
1/4 teaspoon ground nutmeg (for filling)
1 tablespoon lemon juice (for filling)
1 large egg (for egg wash)
1 tablespoon milk or cream (for egg wash)
Instructions
Prepare the dough: Combine flour and salt in a bowl. Cut in cold butter and shortening until mixture resembles coarse crumbs. Gradually add ice water until dough comes together. Pat into a disc, wrap, and chill for at least 30 minutes.
Make the filling: Peel, core, and dice apples. In a saucepan, combine apples, granulated sugar, brown sugar, cinnamon, nutmeg, and lemon juice. Cook over medium heat until apples are tender, about 10-15 minutes.
