1 cup fresh cranberries (or frozen)
1/2 cup granulated sugar
1/4 cup brown sugar
2 tablespoons all-purpose flour (or cornstarch)
1 tablespoon lemon juice
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon ground ginger
1 cup all-purpose flour (or gluten-free blend)
1 cup rolled oats
1/2 cup brown sugar
1/4 cup granulated sugar
1/2 cup cold butter (1 stick), cut into small cubes
1/2 cup chopped pecans or walnuts (optional)
1/4 teaspoon salt
Instructions
Preheat oven to 375°F (190°C).
Prepare the apple cranberry filling: In a large bowl, combine sliced apples, cranberries, granulated sugar, brown sugar, flour, lemon juice, cinnamon, nutmeg, and ginger. Toss to coat.
Prepare the oat topping: In a separate bowl, combine flour, rolled oats, brown sugar, granulated sugar, and salt. Cut in cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs. Stir in nuts, if using.
Pour the apple cranberry filling into a 9×13 inch baking dish.
Sprinkle the oat topping evenly over the apple cranberry filling.
Bake for 45-50 minutes, or until the topping is golden brown and the filling is bubbly.
