  • 3 large egg whites, at room temperature
  • 1 teaspoon pure almond extract

  • 1 cup powdered sugar, for coating

Instructions

  • Preheat oven to 325°F (160°C). Line a baking sheet with parchment paper.
  • In a large bowl, combine almond flour and granulated sugar.
  • In a separate bowl, beat egg whites until stiff peaks form.
  • Gently fold the egg whites into the almond flour mixture. Add almond extract and Amaretti liqueur (if using).
  • Cover the bowl and chill the dough for at least 30 minutes.
  • Place the powdered sugar in a shallow bowl.
  • Roll the dough into 1-inch balls and coat generously with powdered sugar.
  • Place the coated cookies on the prepared baking sheet, leaving some space between each cookie.
  • Bake for 12-15 minutes, or until the cookies are lightly golden brown and the surface is cracked.
  • Let the cookies cool completely on the baking sheet before transferring them to a wire rack.
